Buttermilk Cornbread

1 cup

cornmeal

1/3 cup all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 egg, slightly beaten
3 tbsp butter, melted
1 cup buttermilk

 

Traditionalists use a cast iron skillet or cast iron molds but I use a square pyrex baking dish with good results.

Place baking dish or skillet in oven and preheat oven to 400 degrees.

Combine dry ingredients. Add beaten egg, butter and buttermilk and mix well.

Pour into greased baking dish and bake for about 20 minutes or until lightly browned.
