Corn Pudding

This dish goes with about anything and so is a good neutral side dish for a pot luck.

4 Tbsp butter
1/2 cupflour
1 tspsalt
2 Tbspsugar
1 cup milk
1 cancreamed corn (15 oz can)
1 canwhole kernel corn (15 oz can)
3 eggsseparated

Heat oven to 350

Melt butter in saucepan and add flour (making a roux). Gradually add milk. Add sugar and salt. Cook stirring constantlty until smooth and thickened. Mixture will be thick.

Remove from heat and stir in corn. Lightly beat egg yolks and add to the mixture.

Beat egg whites until stiff peaks form and fold into the mixture.

Transfer to a 2 qt buttered casserole. Set casserole in a larger pan in the oven and add boiling water to the larger pan.

Bake for about 1 hour. Test for doneness with knfe which will come out clean when done.
