Mary's Cuban-inspired Chicken

Serves 2

1 12oz. can of chicken breast
cup green pepper, sliced
cup onion, minced
tsp salt
 Ground pepper to taste
8 green olives (I use pimiento stuffed) - optional
1 bay leaf
1 clove garlic, minced (or equivalent garlic powder)
can green peas (small can)
1 tbsp tomato paste (in tube)
8 - 10 grape tomatoes
 juice of 2 limes
1 tbsp olive oil
  
  

Reserve juice from canned chicken.

Marinate chicken pieces in lime juice in refrigerator for at least 1 hour.

Lightly saute onion, garlic and green pepper in olive oil. Add liquid from chicken, bay leaf, tomato paste, olives, salt & pepper. Simmer 15-20 minutes. Add tomatoes, peas, chicken and simmer for another 5 minutes.

Note: Some cumin might be a good addition, too but I didn't have any when I first tried this.

Serve with Yellow Rice*.

  
* We use a yellow rice mix from Sam's Club, but you should be able to find smaller packages of cuban style yellow rice at any supermarket.
