Parmesan Pasta
(Adapted from a recipe in the Women Aboard cookbook)

Serves 4

8 ozAngel hair pasta
1
Tomato, chopped
3 - 4 ozDry Salami, chopped (optional)
4 - 5Oil cured olives, chopped, or a 2 oz can of ripe olives
1/2 cup + 1/4 cupParmesan cheese, grated
3 tbspOlive oil
1/4 tspGarlic powder, or 1 finely minced garlic clove
1/2 tspSalt
1 tspItalian Seasoning
      

Cook pasta according to package directions.

Combine cup of the cheese in a bowl with all other ingredients in a serving bowl and mix well.

Drain pasta, add to mixture; toss to coat completely and serve.

Serve remaining cup cheese on the side to be passed and sprinkled on each serving.

NOTE: in fact, the pasta is good with any variation on the ingredients listed. Another variation is to use a mixture of butter and olive oil and just the cheese.
